Peach Puff Pancake

 A delicious twist on Swedish Pancakes! 


4 TBSP Butter

6 eggs

1 cup flour

1/3 cup sugar

1/8 tsp salt

1 cup milk

1 tsp vanilla

3 medium peaches, peeled sliced


Heat oven to 375. Melt butter in a 9x13 pan by putting it in the oven for 2 minutes. 

Beat eggs slightly in a large bowl. Beat in flour, sugar, salt, milk, and vanilla until smooth. 

Layer peaches into the melted butter and return to oven for 2-3 minutes or until sizzling. 

Pour batter over peaches. Bake about 20 minutes or until puffed and golden. 


Optional: Serve with whip cream or toppings of your choice.
