Quinoa-Stuffed Sweet Potatoes

 

5 medium sweet potatoes
1 cup quinoa, rinsed
2 cups water
3 tablespoons extra-virgin olive oil
1 can of chickpeas, rinsed and drained
1/2 cup chopped green onion
1/2 cup chopped fresh parsley
2 cloves garlic, minced
3 tablespoons lemon juice
1 teaspoon Salt
Goat cheese
sliced almonds or other chopped nuts (optional)


Cook sweet potatoes in microwave or oven.

In medium saucepan, combine the quinoa and water. Bring the mixture to boil over medium-high heat, then reduce the heat as necessery to maintain in simmer. Simmer, uncovered untill all of the water is absorbed. Remove the pot from the stove and fluff the quinoa. Add the chickpeas, green onion, parsley, garlic, lemon, salt, and olive oil. 

Add the goat cheese and almonds and enjoy!
