Pear Salad

 Before we had kids, Darrell and I enjoyed a trip to Italy.  While in Assisi, we had the best salad, and it was so simple.  That was what we found about true Italian food--that it was simple.  This salad is a favorite of ours when pears are in season.  

Another favorite salad: Favorite greens drizzled with olive oil, lemon juice and a bit of salt and pepper. 


Your favorite greens (arugala is delicious if you have it)

Candied nuts*

Pears sliced thinly

Shaved parmasean or romano cheese (any hard cheese works)

Drizzle with olive oil and honey


*You can easily candy your own nuts in just a few minutes on the stove, using a non-stick pan, place chopped nuts in a saute pan (just one layer so they all have contact with the pan).  Cook with about 1/4-1/3 cup of sugar until the sugar is melted and just begins to harden.  Quickly turn off heat and pour nuts onto plate to cool.  I know there are other great methods of candying nuts, but I often use this because it's so fast and I can do it 10 minutes before I want to make the salad.
