Paneer or Chicken Indian Curry

    

My friend Annapurna who is from India taught me how to make this dish using chicken.  I still can't create it as well as she did--but we still love it.  We've tried some variations on this dish to make it easier and then started making it with paneer (Indian cheese) and we love it!  

2-3 onions minced 
1-2 TBS olive oil
28 oz. can crushed tomatoes 
2 sprigs of fresh mint (optional)
2-3 cloves garlic minced
3/4 tsp tumeric
5 heaping tsp coriander
1 1/2 tsp garam masala
1 tsp salt 
1 lb Paneer cut into cubes OR 2 cups cooked chicken diced

Saute onions until soft and then add the tomatoes, mint and garlic, and cook together for 5-10 min. Add spices, and then add paneer or chicken. 

This can be served over rice, with Naan bread, or inside any type of fry bread.
