Tabbouleh

In Darrell's words, "this is women's food."  He now likes it, but still stands by his statement that it is women food.  

Tabbouleh

Soak at least 15 minutes:
2 cups boiling water
1 cup #1 or #2 cracked wheat

Add:
2 large tomatoes, diced
1 bunch green onions, chopped fine
1 cup chopped parsley
Juice of 2 lemons
2 T oil
2 ½ tsp salt
¼ tsp pepper

Chill until ready to serve
