I just found a delicious and healthy salad dressing recipe in the Midwest Living magazine. This will definitely become one of my go to recipes for salad dressing.
Ingredients
2 cups fresh or frozen (thawed) strawberries
1/3 cup olive oil
2 tablespoons white balsamic vinegar or balsamic vinegar
1 tablespoon packed brown sugar
1/4 teaspoon kosher salt
3/4 teaspoon ground black pepper
Combine all ingredients in a blender or using an immersion blender, and blend until smooth. Store, covered in the refrigerator for up to 3 days. Whisk well before serving.
Goes well with feta cheese, nuts, fruit, beets, avacado, or chicken breast in a mixed green salad.
