I'm starting to think about soup as it's turning cold...here's a classic that is fancied up a little, but still quick and easy. Serve with cheese sandwiches or crusted bread, yum!
Creamy Tomato Soup
1 T butter or olive oil
1 onion
1 10 3/4 can tomato soup, condensed
3 14 oz. cans diced tomatos
3 1/2 cups milk
1/2 cup heavy cream
2 tsp chicken bouillon
1/4 tsp pepper
3/4 tsp salt
2 tsp basil (or you can do oregano instead)
Saute onions. Add remaining ingredients. cook over medium high heat until hot, do NOT boil. You can puree 1/2 of the soup to make it more creamy
