Wheat Bread

I love this bread, and I've been asked numerous times for the recipe.  I think it turns out so light that it tastes like it is half wheat/half white flour, but it is 100% whole wheat.  I have a bosch mixer so that's the only way I've done it.  I'm sure you could knead it by hand, but I've never tried.  Also, it makes 3 loaves--I've never tried doing less than that. But I've never had a problem finding someone to give a loaf of bread away to. :) Sometimes we will cut it and freeze it and just pull out what we want.

8-11 cups whole wheat flour
2 rounded tablespoons dry yeast
1/3 cup sugar (or honey)
4 cups very warm water
1/3 cup vegetable oil
1 tablespoon salt

Mix in 5 cups of flour, yeast, and sugar.
Add water, oil, and salt.
Mix
Add remaining flour slowly (sometimes I've only needed to add about 3 more cups--using 8 cups total) until the dough pulls away from the bowl.  Knead for 8 minutes.

Form into 3 loaves, put into bread pans that have been oiled (I just spray them with cooking spray)

Rise in oven with a bowl of boiling water for 30 minutes.
Remove bowl, and turn on oven to 350 degrees, and set timer for 30 minutes.  (Yes, you let the oven heat while the bread is in the oven, and use that as part of the cooking time).
