Quinoa and Beet Salad

Darrell and I went to the hot truck spot for a date a few weekends ago and tried out The Beet Box.  I really liked the quinoa and beet salad and thought I'd try to recreate it.  I love what turned out...and Darrell did too.  He said he liked it even better than what we had tried.  Give it a try and tell me what you think.  I just used beets that were already cooked (I found them at Costco), I'm looking forward to using beets from my garden in a month or two.  I suppose you could try canned beets.

1 cup uncooked quinoa, cook and cool slightly
4 small-medium beets, peeled, cooked and diced
4-5 oz. goat cheese, crumbled (if you want you could substitute feta cheese--we just love anything and everything with goat cheese)
1/4 cup chopped mint

whisk together
1 tsp salt
1 tsp dry mustard
1/4 cup red wine vinegar
1/4 cup olive oil

mix ingredients and enjoy!
I'll try to post a picture of this...I love the pink/red color that this salad ends up being.
