I used to hate mushrooms. I wondered why people would order something with mushrooms at restaurants--how they would ever think that mushrooms tasted good. I think I've become converted to mushrooms--if they are done right. Here's an tasty easy recipe that I've adapted from Darrell's mom.
Ingredients
4 chicken breasts (I use frozen--just because I hate dealing with raw chicken--so if you use raw, just lessen the cooking time)
8-10 oz sliced mushrooms
swiss or mozzarella cheese (enough to slightly cover chicken)
salt and pepper to taste
1-2 tsp Herbs de Provence (or you could substitute rosemary, thyme, or tarragon)
Place chicken breasts in 9x13 pan, sprinkle with salt, pepper, and Herbs de Provence. Top with mushrooms, cheese, and then cover with foil. Bake at 375 for about 45-50 minutes, until chicken is cooked throughout.
