1 cup quinoa Salad
2 cups water
2 cloves garlic, minced or pressed
1/2 cup chopped scallions
1 cup cherry or grape tomotoes, halved
1 cup finely chopped parsley
2 T fresh chopped mint (optional)
2 T fresh chopped cilantro (optional)
1/4 cup fresh squeezed lemon juice
1/4 cup olive oil
1/2 crumbled feta cheese
1/2 cup kalamata olives or black olives (your preference), chopped
Bring quinoa and water to a boil, cover and simmer on low for 20 minutes. Let quinoa cool to room temperature, then transfer to a serving bowl. Mix garlic and scallions in with quinoa. Add remaining chopped vegetables and herbs. Stir lemon juice and olive oil together and add to salad. Finally, mix in feta cheese and olives. Season with salt and pepper.
**If you don't have all the ingredients. I've left out the herbs, and added red onion instead and it tasted great still!**
