Salmon with Avacado and Peach/Mango Salsa


This has become one of our favorites.  Darrell's mom shared this one with us.  

Marinate salmon for 10-15 min with a little RW or WW vinegar, olive oil, and salt and pepper...broil salmon for abt 4 min on each side (or grill it)

Mango or Peach salsa:
1 mango (or 1-2 peaches)
1 avacado
1/2 red, yellow or orange pepper (optional)
1/2 red onion... we like it better with green onions (or even no onions)
2 TBS ricewine or whitewine vinegar
1/2 fresh lemon juice
1/2 TBS sugar
salt and pepper to taste
